Recently purchased an EOS and paid extra for "leather upholstery" It now looks as though much of the upholstery/trim is only vinyl. Does anyone know which parts of the "leather" upholstery are actually leather and which are vinyl ?

The center sections of the seat backs and bottoms are leather. The rest is vinyl.

Vinyl bits are much harder wearing on the sections which have a lot of movement...

With the Nappa leather option it's all the surfaces you actually sit/lean on, so that's the top of the squab and the backrest. The sides and rear plus the door coverings are vinyl. Bit of a rip-off if you ask me. The smell of the leather (which is one of the main reasons I like to have leather) disappeared many moons ago..
