Our commiserations for your unfortunate experience; not something you want to face under any circumstances. Do you think the hold-up was specifically intended to steal your car or was it taken to use as a "get-away" vehicle?
If it was specifically for your car, I doubt if you will ever see it again as it will used either for "rebirthing" another legitimately acquired damaged/written-off Eos or shipped to the Middle-East or Asia where past ownership checks are cursory or non-existent. This activity is a real problem in Australia for prestige vehicles/motor bikes and the "rebirthing"component has resulted in the banning of "written-off" vehicles being re-registered thus removing part of the incentive to steal legitimate vehicles. Preventing the export of stolen vehicles is more difficult as it would require inspection of every shipping container to leave the country
If it was used as a "get away" vehicle, you will most likely get it back in a day or two either burnt-out to hinder identification of the perpetrators or intact but showing some signs of abuse.

Was the stealer taking it away on a flatbed tow truck, you think? I thought the Immobilizer System on all late model VWs with serialized chip in the key was supposed to make it impossible to start without the proper key that was programmed to the car, and thus making it impossible to move the shifter lever out of park and unlock the parking brake locking mechanism inside the transmission, even if someone broke out a window and got inside the Eos.

The '...at knifepoint...' comment suggests they had the benefit of obtaining the keys to the car.
Sorry to hear about the theft. Let's hope they catch them.
I'm originally from Worthing - I moved away after someone used my car as a trampoline 10 years ago.
