Other than painting it, you could order one from VW for a 2.0 model. The cross bars would be black but the surround would be chrome. There isn't too much aftermarket yet for the Eos. You could see if ABT or JE Designs or OEMplus has anything yet. They are carrying full body trim kits but I don't know if they are carrying what you are looking for.

I suppose that you can do it yourself.My previous car was bimmer e46 and I made my grill black.You only have to take off the grill and then send it to any paintshop or service.They will remove the chrome from the plastic otherwise the paint will start falling after several washes.And then they will repaint it with the black color.Good luck,I really want to see what's going to happen.
Don't forget to post photos when it's all done.I am also black grills' fan

Hello my friend, I got my Black EOS since June 2008, I take off the grill and then send it to a paintshop, until now, all black color remain in the grill, see my pictures.
P.S.: Next pictures with tint windows and spolier..!
